Apple Butter Harvest Bread

A naturally fermented sourdough bread topped with apples simmered in homemade apple butter, butter, and nutmeg, then finished with a sweet vanilla glaze.

  1. Combine active sourdough starter and warm water in a large bowl.
  2. Add bread flour and mix until no dry flour remains.
  3. Rest dough for 30 minutes.
  4. Add salt and olive oil.
  5. Perform 3 sets of stretch-and-folds spaced 30 minutes apart.
  6. Allow dough to bulk ferment until puffy and airy.
  7. In a saucepan, combine diced apples, Golden Orchard Apple Butter, butter, and nutmeg.
  8. Cook over medium heat for 8–10 minutes until apples soften and mixture becomes thick and glossy.
  9. Allow apple mixture to cool.
  10. Transfer dough to a generously oiled 9x13 pan.
  11. Gently stretch dough toward the corners.
  12. Dimple the dough with your fingertips.
  13. Spread the apple butter mixture evenly across the surface.
  14. Bake at 425°F for 25–30 minutes or until golden brown.
  15. Whisk together powdered sugar, milk, vanilla, and honey.
  16. Drizzle glaze over warm bread.
  17. Cool slightly before slicing and serving.
