Apple Butter Harvest Bread
A naturally fermented sourdough bread topped with apples simmered in homemade apple butter, butter, and nutmeg, then finished with a sweet vanilla glaze.
Ingredients
- 400 g active sourdough starter
- 700 g warm water
- 1000 g bread flour
- 20 g salt
- 50 g olive oil
- 1 (4 oz) jar Earth Born Treasures Golden Orchard Apple Butter
- 4 medium apples, diced
- 4 Tbsp butter
- 1/2 tsp nutmeg
- 120 g powdered sugar
- 2 Tbsp milk
- 1 tsp vanilla extract
- 1 Tbsp honey
Instructions
- Combine active sourdough starter and warm water in a large bowl.
- Add bread flour and mix until no dry flour remains.
- Rest dough for 30 minutes.
- Add salt and olive oil.
- Perform 3 sets of stretch-and-folds spaced 30 minutes apart.
- Allow dough to bulk ferment until puffy and airy.
- In a saucepan, combine diced apples, Golden Orchard Apple Butter, butter, and nutmeg.
- Cook over medium heat for 8–10 minutes until apples soften and mixture becomes thick and glossy.
- Allow apple mixture to cool.
- Transfer dough to a generously oiled 9x13 pan.
- Gently stretch dough toward the corners.
- Dimple the dough with your fingertips.
- Spread the apple butter mixture evenly across the surface.
- Bake at 425°F for 25–30 minutes or until golden brown.
- Whisk together powdered sugar, milk, vanilla, and honey.
- Drizzle glaze over warm bread.
- Cool slightly before slicing and serving.
