Wildfire Berry Sourdough Mini Donuts

Ingredients
- 150 g active sourdough starter
- 120 g whole milk or buttermilk
- 70 g melted butter
- 70 g raw sugar
- 1 large egg
- 8 g vanilla extract
- 180 g all-purpose flour
- 40 g bread flour
- 3 g salt
- 2 g cinnamon (optional)
- 6 g baking powder
- 2 g baking soda

- Powdered sugar
Instructions
- Night before, in a large bowl, whisk together the sourdough starter, milk, melted butter, egg, vanilla, sugar.
- Add flour, salt, and cinnamon.
- Mix until a thick, scoopable batter forms. Do not overmix.
- Cover tightly and refrigerate overnight.
- The next morning, remove batter from refrigerator 30–45 minutes before cooking.
- Gently fold in the baking powder and baking soda.
- Preheat mini donut maker and lightly grease.
- Pipe or spoon batter into cavities about 80–90% full.
- Cook approximately 3–5 minutes or until golden and springy.
- Allow donuts to cool slightly.
- Warm Wildfire Berry jam slightly for easier spreading.
- Spoon or glaze jam over donuts.
- Dust lightly with powdered sugar.
- Serve warm.
